Some delicious biscuits with a taste of childhood.
We’ll use almond butter as fat
I never use margarine, first because it contains palm oil, and also because I try to avoid processed foods. If you have a good blender, you can make your own almond butter, I did a video about it last week. Moreover if you rarely use it, it can be convenient to make only the amount you need instead of buying an entire jar.
So, after the almond butter, add the sugar. I use organic blonde cane sugar. I take this opportunity to point out, as the question was raised, that this sugar is not refined with bone char, this method has been banned in the European Union since 2000 for organic sugars.
Add the applesauce, the vanilla and the cinnamon and blend a first time. If you want it You can definitely do this recipe by hand too.
Put the dry ingredients : the flour, the baking powder, the starch, the salt, the almond powder and blend them in.
Cover your baking sheets with baking paper, I like to reuse my baking paper, this one has already done a few batch of cookies.
Preheat your oven at 165° (330°F)
Prepare a plate with some sugar, shape the dough into balls and roll them into the sugar. You could also use crushed nuts, sesame seeds, I have a little something for the sugar version.
Shape little craters with your thumb and fill them with jam.
Put them in the oven for 12 to 15 minutes until they are golden
Let them cool down before savouring them. Et voilà, bon appétit !
