Brownie Cheesecake with strawberry mousse
IMPORTANT-make sure you use the size of the tin I advised in the recipe.I used slightly smaller and it took longer to bake.
The bottom layer- brownie :
• 120 grams of dark bitter chocolate
• 120 g butter
• 1/2 cup sugar (preferably cane )
• 2 large eggs
• 50 – 70 g ground almond flakes (not used by me due to allergy)
• 2 full tablespoons of flour
• 1 level teaspoon baking powder
The curd (cheese mixture) :
• 1 kg of soft cheese
• 3 tablespoons cornstarch
• 1 cup sugar (a bit less than fill cup)
• 4 eggs
• 2 tsp vanilla paste or vanilla extract or vanilla sugar 3 tablespoons
• 100 grams of dark chocolate
• 100 g of white chocolate
Strawberry mousse :
• 400 g frozen or fresh strawberries (if we have a choice- better prepare the frozen strawberries )
• 1/4 cup sugar
• 2 full teaspoons cornstarch
Cheese and eggs for the cheesecake should be warmed at room temperature. Prepare a form having a diameter of 26 cm lined baking paper ( release paper on the outside, tightly closed hoop ) may be rectangular form of 20 x 30 cm lined baking paper
Prepare the strawberry mousse :
To a saucepan add frozen strawberries , cover the saucepan and simmer for about 10 minutes, stir occasionally . After thawing, add sugar, mix using blender , add the cornstarch previously distributed in several tablespoons of strawberry mousse , just boil and set aside to cool down . Strawberries can also be pre- thawed at room temperature , then mixed and proceed as above .
Fresh strawberries rinse, dry, boil for 10 minutes. Mix flour in 2 – 3 tablespoons of cold water , then add 2 – 3 tablespoons of mousse and mix. Pour over the strawberries and boil constantly stirring. Mousse should be thick .
Prepare brownie : melt the butter and chocolate over low heat stirring , trying not to heat too much . Set aside from the heat , add sugar and mix. When cooled down, add eggs and mix again .
In a bowl, mix the ground almonds , sieved flour and baking powder . The mix was poured into the chocolate mass and mixed to a smooth and homogeneous mass . The mass is put on the bottom of the springform pan , level the surface . Preheat the oven to 170 degrees.
Prepare the cheese :
Mix cheese with flour and sugar , then add the eggs and vanilla. Divide in half and to each half to add melted ( white and dark ) chocolate ( it may be warm , but not hot ) . You can melt chocolate in the microwave , in a water bath or directly in a saucepan ( broken into cubes and stir on low heat to heat )
Place the dark chocolate mixture on the bottom the tray over the brownie , level surface. Do the same with the white chocolate mixture
Put a teaspoon of strawberry mousse in few places, try to make a small cavity with another spoon, so the mousse goes deeper into white chocolate mix.
Put in the oven and bake for 55 minutes , until the mixture is set , turn off the oven (do not open ) and leave the cheesecake for 10 minutes in a closed oven , then gradually open the oven .
Chill in the refrigerator until it regains its even better consistency and serve and ENJOY.
