    In this video, I share a family treasure – our secret lemon roll recipe.

    My grandfather who was a professional cake/pie maker passed it on to my mom.

    She has been making the lemon roll once a year for my birthday or another special occasion. It is my absolute favorite cake!


    Die deutsche Version des Rezepts kommt nach der englischen. Mein Grossvater war ein Konditor und hat diese Rezept an meine Mutter weiter geben. Sie hat die Zitronenrolle jedes Jahr entweder zu meinem Geburtstag oder einen besonderen Anlass gemacht. Es ist mein Lieblingskuchen.

    Ingredients for Icing

    * 1 package vanilla pudding (hot)
    * Juice of 2 lemons
    * Water (see 2. below)
    * 4 tbs sugar
    * 1.5 sticks soft butter (200g)

    Ingredients for cake:

    * 5 eggs
    * 6 tbs sugar
    * 1 pinch of salt
    * 2/3 cup corn starch (150g)

    The Icing (Part 1)

    1. Squeeze two lemons
    2. Add water until you have 1 cup of lemon juice and pour it into a pot
    3. Add the vanilla pudding to some of the lemon juice in a cup (You will need that once you brought the pot to a boil)
    4. Add 4 tbs of sugar to the lemon juice in the pot
    5. Bring juice to a boil
    6. Add the pudding mix from 3. and stir until thickened
    7. Let it cool off until room temperature
    8. Let 1.5 sticks of butter warm up to room temperature

    While pudding is cooling off start with the cake:

    The Cake

    1. Measure 2/3 cup of corn starch and leave it in measuring cup (you will need it in a later step)
    2. Add 5 eggs into a mixing bowl
    3. Add 6 tbs of sugar to the mixing bowl
    4. Add a pinch of salt to the mixing bowl and start mixing for 5-10 min
    5. Fold in the corn starch step-by-step using a sieve
    6. Prepare cookie sheet with backing paper
    7. Spread batter on cookie sheet
    8. Bake for 8-10 min at 350F or 180C (make sure it is still soft enough so you can roll it later on)

    The Icing (Part 2)

    1. Combine pudding and butter
    2. Whip until smooth

    Putting it all together

    1. Cut cake in half (so you have two rolls)
    2. Peel cake off the baking paper
    3. Use 2/3 of the icing for the filling (spread it on the two pieces of cake)
    4. Save 1/3 of the icing for the outside of the roll
    5. Make two rolls
    6. Ice the two rolls
    7. Decorate the iced rolls with a fork
    8. Add chocolate sprinkles or shaved chocolate



    Zutaten für die Creme:

    * 1 Päckchen (ca. 40 g) Vanillepudding
    * 1/4 Liter Wasser mit Zitronensaft von 1 – 2 Zitronen
    * 4 Esslöffel Zucker
    * 200 Gramm weiche Butter

    Zubereitung der Creme:

    * Wasser mit dem Zitronensaft ein einen Topf (etwas davon zurückbehalten, zum Eirühren des Puddingpulvers)
    * Zucker auch in den Topf – alles zum Kochen bringen – eingerührtes Puddingpulver dazugeben – kurz rühren bis Pudding dick ist – dann abkühlen lassen, dabei immer mal umrühren – der Pudding muß die gleiche Temperatur haben, wie die Butter (Creme wird sonst nicht so schön glatt)
    * Pudding und Butter in eine Rührschüssel geben und mit dem Mixer zu einer Creme rühren – eventuell noch mit etwas Puderzucker oder Süßstoff abschmecken, falls die Creme noch zu sauer ist, durch den Zitronensaft.

    Zutaten für den Boden (Teig):

    * 5 Eier
    * 6 Esslöffel Zucker
    * 1 Prise Salz (nur eine Messerspitze, oder man sagt auch zwischen Daumen und Zeigefinger, also wirklich nur ganz, ganz, wenig!!!!)
    * 150 Gramm Spreisestärke (feines Stärkemehl aus Kartoffeln – in Deutschland kennt man es unter “Mondamin” feine Speisestärke)

    Zubereitung des Bodens
    * Eier, Zucker und Prise Salz in eine Rührschüssel geben und in einem warmen Wasserbad (eine andere Schüssel mit warmen Wasser) mit dem Mixer schön steif rühren (ca. 5 – 10 Minuten) -
    * Dann vorsichtig – nach und nach die Speisestärke durch ein Sieb dazugeben und mit einem Löffel unterrühren.
    * Ein Kuchenblech mit Backpapier auslegen – den Teig darauf verteilen – dann 7 – 10 Minuten backen bei ca. 180° ( der Teig sieht dann nur ganz bischen hellbraun aus)
    * Danach auf dem Blech abkühlen lassen

    Zubereitung der Zitronenrollen
    * Gebackenen Boden in der Mitte teilen – die beiden Teile (für 2 Rollen) vom Backpapier vorsichtig lösen – mit der oberen Seite nach unten auf die Arbeitsplatte (Tisch) legen -
    * die Zitronencreme (bischen übrig lassen zum Verzieren) auf beide Kuchenteile streichen -
    * dann versuchen den Teig vorsichtig zu rollen – kann sein, dass er bischen kaputt geht dabei – ist aber nicht schlimm!! -
    * mit dem Rest Creme von außen beide Rollen bestreichen –
    * mit Schokostreuseln verzieren –
    * Fertig!!!
    * Im Kühlschrank kaltstellen.
