Chicken Clay Pot Rice With Sausage 煲仔雞飯 (Hot Pot Rice) Traditional Chinese Cooking

Chicken And Sausage Clay Pot Rice

4 oz. sliced chicken
1 Chinese sausage
1 teaspoon chopped garlic
1 teaspoon chopped ginger
1/2 teaspoon salt
1/4 teaspoon chicken base
1/2 teaspoon sugar
1/2 teaspoon cornstarch
1/4 teaspoon sesame oil
1/2 cup rice
2/3 cup water
2 tablespoons cooking oil
1 tablespoon dark sweet soy sauce

Slice chicken and put into a bowl. Add salt, chicken base, sugar, cornstarch, sesame oil, garlic and ginger. Mix all the ingredients with a fork or chopsticks. Slice Chinese sausage.

Put 2/3 cup water in a clay pot and cover with a lid. Bring the water to a boil at low to medium heat. The stove should not be turned higher than medium heat when cooking with a clay pot. Clean 1/2 cup of rice in cold water. Rinse rice 3 or 4 times until water is clear. Water in the clay pot will be boiling when the steam is coming through the hole in the lid. Be careful because the clay pot will be hot. The steam coming through the hole in the lid will also be hot. Add rise to the boiling water in the clay pot. Make surte rice is completely covered by the water. Cover the lid and cook the rice for 5 to 8 minutes. Remove lid and check rice. Use chopsticks to poke holes in the rice. Add chicken and spread out on top of the rice. Spread the Chinese sausage on top of the rice as well. Pour the cooking oil over the chicken and Chinese sausage. Cover with lid and cook the rice for 10 to 15 minutes. When finished cooking, pour the sweet dark soy sauce over the chicken and sausage. Serve in the clay pot. Enjoy!
