    Ingredients (Serves 4)
    1/2 lb diced chicken,
    1/2 lb ground pork or beef,
    1/4 lb diced cooked peeled shrimp,
    1 C rice,
    1/4 C oil,
    1 lg shallot, sliced thin,
    4 t grated fresh garlic,
    1 T grated fresh ginger,
    3 carrots cut into thin rounds,
    2 baby bok choi cut into thin slices,
    3/4 C thin sliced shitake or brown mushrooms,
    1 green onion sliced thin,
    3 T chopped cilantro,
    2 T soy sauce,
    2 T oyster sauce,
    2 T water,
    1 T corn starch,
    4 eggs,
    salt and pepper to taste.

    Bring 1 1/2 C water to a boil in a small pot; add 1 C rice, let boil 3 minutes, then reduce heat to low and cover. Cook approximately 18-20 minutes; set aside. In a large pot over medium heat, fry shallot in oil. When translucent, add garlic and ginger and cook one minute. Add poultry and meat and stir until meat is browned; add salt and pepper to taste. Add shrimp and cook through. Add carrots, bok choi and mushrooms and let cook until almost tender. In a separate bowl, combine soy sauce, oyster sauce, water and corn starch and whisk to make a sauce. Pour sauce into meat and vegetables in large pot and let cook three minutes to thicken. Add cooked rice to pot and stir to coat evenly; remove from heat. Add in cilantro and green onion and stir. In a frying pan over medium heat, fry your eggs one by one in a generous amount of oil. To serve, place one fried egg in the bottom of a bowl. Spoon the rice mixture over it and gently press rice down. Turn out the egg/rice onto a plate, being careful not to break the shape created by the bowl mold. Serve hot.

    Ingredients (4 couverts)
    200g poulet,
    200g porc ou viande hachee,
    100g crevettes decortiquees,
    175g riz jasmin,
    350 ml eau,
    60 ml huile vegetale,
    1 grande echalotte,
    4-5 gousses d’ail rapees,
    1 c.a.s. gingembre rape,
    3 carrottes,
    2 petites choux chinoises,
    50g champignons de paris ou champignons noirs,
    1 oignon vert,
    3 c.a.s. coriandre hache,
    2 c.a.s sauce soja,
    2 c.a.s. sauce huitre,
    2 c.a.s. eau,
    1 c.a.s. maizena,
    4 oeufs,
    sel, poivre.

    Dans une petite casserole, portez l’eau a l’ebullition; ajoutez le riz, laissez bouillir 3 minutes, puis baissez le feu, mettez le couvercle et laissez cuire 18 minutes. Dans une grande marmite, faitez frire dans l’huile une echalotte coupee en fines lamelles. Quand l’echalotte devient transparente, ajoutez l’ail et le gingembre et faitez frire 1 minute. Ajoutez le poulet et la viande, poivrez et salez legerement, et remuez jusqu’a ce que les viandes sont bien cuites. Ajoutez les crevettes et laissez cuire jusqu’a ce qu’elles ont une couleur rose. Ajoutez les carottes coupees en fines rondelles, et les champignons et les choux de chine en lamelles; remuez et laissez cuire environs 6 minutes (carrottes doivent etre cuites mais encore un peu croquants). Dans un petit bol, melangez la sauce soja, la sauce huitre, l’eau et la maizena. Remuez bien pour en faire une sauce et ajoutez-la a la melange de viandes et legumes cuites. Laissez cuire 2 minutes, ajoutez le coriandre et l’oignon vert, remuez, puis mettez a cote. Sur le meme feu, faites frire les oeufs un par un dans un peu d’huile. Pour montez le bol renverse, mettez un oeuf au fond d’un bol, puis mettez le riz dessus. Renversez le bol sur une assiette et servez chaud.
